These crostini have an elegant flavor punctuated by sweet roasted red peppers, earthy goat cheese and fresh rosemary. Simple ingredients put together simply- these are perfect for a holiday wine tasting, fancy cocktail party or as a delicious precursor to a nice dinner out with friends.

Ingredients

  • 1/2 of an 8oz package of Light Cream Cheese, softened

  • 1 6oz package of Goat Cheese (Chèvre), softened

  • 1/2 Jar of Roasted Red Peppers, drained, chopped small

  • 1 tablespoon fresh Rosemary, finely chopped

  • 1/4 cup Olive Oil

  • Salt and Pepper

  • Crostini (see below)

Directions

  • Take Cream cheese and goat cheese out of the refrigerator. Let stand at room temperature for at 20-30 minutes. Combine Olive Oil and rosemary in a bowl, set aside for 10-15 minutes. Chop the Roasted Red Pepper, reserve some for garnish.
  • Combine Cream Cheese, Goat Cheese, Roasted Red Pepper, Rosemary and Olive Oil mixture and salt and pepper (to taste). Mix well.
  • Crostini: Slice baguette on a slight diagonal, brush with Olive Oil, sprinkle with Salt and Pepper and place on a cookie sheet. Bake in a preheated 400 degree oven for 5-8 minutes until slightly browned.
  • Serve: As croquettes for an elegant party: Top each crostini with about 2 tablespoons of the cheese mixture. Top with a sliver of roasted red pepper. Or serve as a dip with crackers for a quick and easy appetizer.

Notes

  • Roast your own peppers, its cheap and easy.  Simply use tongs and place the raw, whole red pepper directly on aas stove grate, or on a grill, or on a sheet pan under the broiler.  Turn often until the outside is almost completely charred.  Place in a bowl, cover tightly with plastic wrap and let sit for 10 minutes.  Peel the charred skin off, discard the seeds and core and there you have it. • For easy crostini for one- place slices of baquette brushed with oil on your on your panini press- quick and efficient!
  • Try whole wheat baguette.  I love the earthy, nutty quality- and why not get a little more nutrition with your goat cheese decadence?
  • Even easier? make this a dip and have guests serve themselves. At holiday time my mom shapes this dip into a triangle and edges it with rosemary sprigs…. instant pine tree.

  1. I’ve tried this recipe a few times and everytime (without fail), I get a ton of complements. It’s an elegant, yet not too challenging appetizer that pleases the crowds. Highly recommend!

  2. Had this at my birthday celebration and it was a HUGE hit with everyone! The flavors compliment eachother wonderfully, and the creamy texture was great on whole grain crostini.
