Eating for one can be a difficult task, especially when you add a desire to eat healthy into the mix.  These Chicken Fajitas are quick, easy and flavorful and best of all- can be easily made for one using just one fry pan. A flavorful, fast marinade is the key to big flavors for the healthy chicken breast. And if you have a guest (or three) the recipe can be easily doubled or tripled to your tastes. The addition of sweet honey butter on the tortilla keeps moisture from soaking your tortillas and adds to the sweet and savory flavors.

Ingredients

  • One medium chicken breast, cut into strips

  • One medium lime

  • One Clove of Garlic, chopped

  • 1 squeeze honey (about 2 teaspoons)

  • 1 teaspoon Chilli Powder

  • 1 teaspoon Cumin

  • 1 teaspoon salt

  • 1/2 teaspoon ground black pepper or cayan

  • Olive Oil, divided

  • one small red pepper, sliced

  • one small sweet onion, sliced

  • one green onion, sliced on the diagonal

  • For serving
  • one tablespoon butter

  • one tablespoon honey

  • Corn or Flour Tortillas

  • Cheese, sour cream, etc. to taste

Directions

  • Place one tablespoon butter and one tablespoon honey in a ramikan. Set aside to soften.
  • In a small zip top bag add sliced chicken, zest of the whole lime and juice of half your lime (reserve the other half), 1 tablespoon olive oil, garlic, honey, chilli powder, cumin, salt and your choice of pepper.  Zip and mix well with hands.  Set aside for 30 minutes while you chop your vegetables and prepare tortillas*
  • Place a medium nonstick fry pan over medium high heat.  Add 2 teaspoons olive oil to pan and saute marinated chicken strips until cooked through and a little brown (beware, this will splatter a bit).  Remove from pan, add 1 teaspoon more olive oil and saute peppers and onions until they begin to brown but are still crisp. Season with salt and pepper.  Return chicken to the pan and cook 2 minutes until warmed through.  Turn off heat and sprinkle with scallions and squeeze the reserved half of lime over top.
  • Mix butter and honey to create a honey butter spread.  To serve, spread a little honey butter on a tortilla and pile high with fajita mixture and desired toppings.

Notes

  • *heat and crisp your corn or flour tortillas by either microwaving in lightly moistened paper towels for 15-20 seconds or heating in a small fry pan over medium heat, constantly turning.  Store in a folded clean kitchen towel to keep warm.
  • Use the vegetables you have on hand!  Mix in different colored peppers, carrots, mushrooms or even zucchini can be used depending on your preferences.
  • Pepare your chicken ahead of time: slice your trimmed chicken breasts and freeze in a zip top bag.  Thaw in the fridge overnight, or place in a bowl of tepid water with a bare trickle from the faucet to thaw in about 45 minutes without cooking. Thaw while you hit the gym or yoga mat after work!
