Ingredients

  • 3 to 3.5 pounds tomatoes, cored and coarsely chopped

  • 2-4 limes, zest and juice

  • 1/3 cup Sherry Vinegar

  • 1/2 – 1 cup sugar (brown or granulated)

  • 1 tsp Ground Cumin

  • 3/4 tsp Cardamom

  • 1/2 tsp Red Pepper Flakes

  • 1/4 tsp Nutmeg (freshly grated if possible)

  • 1 tbsp minced/grated ginger

  • 1 tsp kosher salt

Directions

  • Add tomatoes to a large non-reactive saucepan with a splash of water over medium heat. Add all ingredients, starting with lower amounts of sugar and vinegar to hold back some for seasoning later.
  • Simmer uncovered for 30 minutes to an hour and 15 minutes until desired consistency is reached. Jam should be thick and sticky. Adjust for sugar, salt and vinegar along the way.
  • Cool completely and serve room temperature.

Notes

  • Serve with assertive cheeses on a cheese board, or use as a condiment on burgers and sandwiches. Try topping simple fish or chicken with a dollop of the jam, or over cooked green beans for an elegant twist.
  • Freeze in individual portions flat in snack style zip top bags to have on hand for holiday get togethers.
